Real ghee is not made by industrial centrifuges. Real ghee — the ghee of grandmothers, of Vedic kitchens, of temple bhog — is made by the bilona method: A2 milk from indigenous Indian cow breeds (Gir, Sahiwal, Tharparkar) is set into curd, hand-churned with a wooden bilona, the butter separated, and slowly simmered for hours until the milk solids caramelize.
Our ghee is sourced from a single cooperative of small dairy farmers in Anand, Gujarat, who keep only desi A2 cows on grass-pasture and follow this exact method. The result is golden, granular when cool, fragrant when warmed — the ghee Ayurveda calls "the divine substance".
For diya: 1 tablespoon of ghee burns ~1 hour in a brass diya. The smoke is purifying, not polluting — Vedic homas use only ghee for this reason.
For anointing: Ayurveda prescribes warm ghee massage (abhyanga) on the third-eye chakra and feet before sleep, particularly during Vata-aggravated seasons.
